Two more Asian-inspired restaurants launched following the initial success of P. Chang's—Pei Wei Asian Diner, a fast-casual spot specializing in takeout, opened in , and Taneko Japanese Tavern, an upscale, Japanese pub serving sushi, noodles and robatayaki dishes, opened in Though the chain began on the west coast, the demand for P.
Chang's flavor-packed fare has since spread like wildfire. There are now more than locations in the United States alone, plus 56 internationally, including several countries in South America, Europe and the Middle East. For such a large chain, it's impressive that all P. Chang's kitchens make their menu items from scratch. Produce is local whenever possible, and vegetables and meat are prepped fresh each day. Chefs do everything from julienning carrots to folding dim sum by hand, and ensure that ingredients are chopped in a particular way for each recipe.
Anyone who's been to the chain has undoubtedly tried the top-selling Chang's Chicken Lettuce Wraps. The signature Chiang family recipe is a secret—the ingredients on the menu are purposely vague—though many restaurants have attempted to copy it.
The traditional cooking vessels, which originated in China over 2, years ago, are an integral part of P. Chang's kitchen operations. Cooks on the wok line get the pans screaming hot in order to release all the flavors of the ingredients and cook them quickly so they retain their nutrients. Problem is the price. And before you say the service and the ambiance, if I wanted to pay for that stuff, I might as well go to a place where the food can't be bought at half price elsewhere. But if someone else really wants to go, and will foot the bill I'm game. Joined: Dec 5, Messages: 36, Likes Received: 17, BS Changs Supposedly the food is good if you aren't expecting Asian.

It was a really fun environment, cooks could listen to music in the kitchen, servers would compete in contests, there was never a dull moment here.
The training process was very cool to participate in, you get to eat full meals each day of your training so you can try many of the dishes in order to be able to recommend them, and at one point there was wine tasting where we could try a bunch of different wines each week.
It was very easy to learn about the food and drinks and to take pride in what was being sold to the customers. The cooks would often cook up a big family style meal for the workers each day, which was very generous.
I liked that all the food was made fresh on site everyday, there is no other place in the mall that you can say the same for. I liked working in the mall because we would go out and drink afterwards, but I also disliked working at the mall because it was kind of dirty I think sewage water seeped out into the canyon at one point for weeks, the mall has a lot of weird problems and the clientele was hit or miss. I ended up leaving in order to pursue a job for what I went to school for.
